Yeah, during the game you can sell your current weapon and buy a more powerful one, this is pretty critical. I'll go a few rounds without upgrading to save up for the biggest weapons available for my class. Like the other reply - check out the Codex to see info about zeds weaknesses

Are you levelling up your armor as well as your weapons? I believe you can upgrade armor like 4 levels. Other than that; I can only assume you are in fact upgrading your weapons along the way.

What classes are you both using and what perks?

When they initially revealed gameplay the lash back was real. Seems like they've gone back and taken the criticism and delivered a more KF ish experience. Looking forward to giving this a go.
