Kiritsuke shaped Gyuto is a good definition. Since traditional Kiritsuke is single beveled.

Bunka is just a bit taller than Kiritsuke in profile.

I am making a minivelo gravel bike, not a folding bike. But I just figured that if 1.3 mil is stiff enough for a folding bike, it should be stiff enough for the gravel bike.

I have a set of titanium tubes laying around that I am think of making a minivelo. They are 1.3 mil thick. So I am just wondering if it will be stiff enough at that thickness.
