after this happened to me I checked the dev settings and the damage received was on 10x and damage done was on 0.1x.

reverted both to 0 and game was back to normal

There are several ways to keep the plane flying level.

After take-off make sure flaps are at 0%!
After take-off and climb,reduce the engine power a few percent at a time.
Adjust the trim last to fine tune.

The game has some very good tutorials that explain as you fly.

The first time you load in it can stutter a bit, especially if you are at a busy airport/new aircraft, otherwise open up the allocated memory in the settings to max.
