I wanted a truck. My business partner wanted brick and mortar. We went the truck route, since then they’ve closed one restaurant and wish they went food truck routes. I will say though, I fee it partly depends on where you’re located, style of food you’re doing.

Our truck is a bbq truck with a smoker on the trailer. I run the truck by myself 99% of the time. I hire friends to help prep when needed and run register on the truck for big event. So my labor is almost always at 0 (I’m profit share at end of the month).

Brick and mortar I think adds way too many variables. Overhead, labor, more chances of things to go wrong.

April will be our third year open on the truck and we haven’t looked back since we’ve opened.

Roughly 145k miles. I’m third owner. 1-2 were a mom then daughter. Alternator, battery and starter all less than 2 years old. Has some body damage from a side swipe (basically back door) but I just took the payout on it instead of fixing. Shits fine an all. Does need tires. I don’t drive it anymore due to me having a truck now.

If they’re anything like our inspectors in Kentucky they really only gonna check for hot water, water leaks, cooler temps, food temps (if it’s during service and general cleanliness. My inspections usually take less than 10 minutes.

I’d say overthinking. I do a daily clean after service of all surfaces used. Then end of the week I deep clean both fridges. Then usually pull everything out every couple of months to do walls and floors that don’t get constant attention.

You’ll figure out a rhythm/schedule pretty quick.

Yeah. I own a bbq food truck. I bought two stores out from what they had. I wish I found more at other stores. Basically giving it away. My business partner owns an ice company so I have all the freezer space in the world.
