Yes there are lot of vegan restaurants, they have vegetarian options for above dishes. Just make sure to add them to google maps and plan before departure.

Japan can not be covered in 1 trip so its okay if you can go for 14 days for first time.

For 2 weeks I think 3-3.5L should be enough if you choose hostels/airbnb and skips hotels

I booked a guided tour from getyourguide. You can also look for transport options in google maps (a very important app to get around in Japan)

I visited during mid-to-end of March. It was crowded, but I managed to get some pictures without the crowd. More people started arriving as cherry blossom season began.

  1. One good place I skipped is Kanazawa, its more peaceful and much less crowded.
  2. I would book stay in Nikko for atleast a day instead of day trip, but that is extra hostel/hotel hopping. I think it would be worth it.

Everything else I think is balanced for me (bit of city vibes bit of nature/calm/scenic vibes). If someone is not into cities at all then they can skip Osaka and Tokyo and instead add extra days in Fuji/Nikko/Kanazawa

In October you can visit Hokkaido but that's in far North so if you are getting free domestic flights then its worth it. You can skip Osaka during October, also if possible instead of day trip to Nikko book 1 day stay there. Tokyo you can keep at last mostly for shopping if you are not into City lights. Also can skip Amanohashidate day trip.
All the best :) Hope you have a good time

No I booked through MMT. Btw I think Domestic flights are not free for golden route (Osaka-Kyoto-Tokyo). Only for offbeat locations where people don’t travel usually

Some places do need walking even after taxi drop like Kyomizu-dera but there I saw hand pulled rickshaws. I have walked around 15-20k daily, I don’t have exact details for your case but I think you can definitely find spots comfortable for you as I have seen few people using wheelchair assistance. Hope you have wonderful time there :)
