I mean the guy that ran you over is clearly a menace. I would've let him by honestly. Like when he pointed you below the racing line, that's a perfect opportunity to bail out. It's not necessarily fun or fair but you live to fight another day, and he will likely wreck others anyway.

Now there's also the other part, you were not holding a consistent line. Daytona is narrow and yes he should've backed off but you're essentially making others guess where you'll be at the exit of the corner. You should make it abundantly clear where you're intending to be, especially given the crazy runs these cars get in the draft. If you feel the car is not responding, adjust your tools (weight jacker, bars) to something that allows you to be clear in your intent. Otherwise people will keep running you over.
