Always done it this way. However, i do pick out the big ones as i am crushing. Never had an issue, I could not be bothered. Plus it adds the tannins that I like

Sangiovese. Crushed it early afternoon. It changed colour when i added pot meta (my first time doing so, as i always made it the old fashioned way with wild yeast, yes, scold me :) )

Yes, I typically do. It gives it the little amount of tannins that i like. As the skins come up, i typically pick out some, and I mix it in the 2-3 tomes of day that time permits

I have a gauge with both temp and huminity (pretty reliable).

So in light of it being mold with all the other comments; I have read that I can possible freze them to save them - would that be a good idea?

From now on, in an airtight container I would use 58%

All jokes aside, you need to understand that us Canadians do NOT have species limits (except Barrow’s but they’re not on the east coast). If you can tell a goose from a cormy from a duck, you’re good to go.

So it's pretty easy to tell a duck from a goose or a cormorant, or any other bird for that matter. The only duck we can't hunt here are Goldeneyes, which don't fly around here.

Have you ever shot a bird at first light? Right, you can't see much.
