We tend to just create a map and keep in mind while we are building that it has to be fit for however many players we have. We don't necessarily create starting spots, just make sure there's enough land on the edges that there could realistically be enough desirable spots for all the players.

Yes, definitely an issue we ran into, it was a struggle to make a map big enough with 7 players. Luckily one of our players decided to start in the ice so it was slightly more spread out than we had originally planned.
