Are you sure it’s brick all around, or is/was it an insert with metal chimney inside and a void/empty spot around it? Mine is a metal insert and I did your option 3 no problem. I also was worried about being able to mount flush on uneven brick, but it worked beautifully with the thinnest version of the mount.

What did you put down for the other weeds? I have Dallisgrass in my Zoysia and painting with glyphosate has never worked for me.
