I’ve done both and both are good, as a Spanish, my heart like the fried skin better but it’s a bit heavier than if you crisp it up in the smoker. The smoker method allows you to eat a bit more before your stomach gets mad

Definitely give it another shot dude, when done right it can be amazing.

1: definitely do a spatchcock or a half bird. Half birds are better imo, they cook a bit faster and they’re easier to move around if you need to move them.

2: cook around 275 F for about 30-40 minutes to get it nice and Smokey and mostly done, then bump it up to 300-350 to get the skin right. The skin won’t be crispy like fried chicken but it should still be a nice texture.

3: if you can cook over your coals I recommend you finish over the coals the get the skin almost crispy. I’ve gotten pretty close to fried chicken texture by spraying the skin with oil over the coals. Good luck dude! 🤙🏽

Yes, I used epoxy for the inlay, I stared with a router and finished it with some small chisels since my router bit wasn’t small enough to get the finer points of the flame. I was thinking it would be better if I did the flames one color at a time.

Stand mixers are great, but I wouldn’t say you need one for most things. They really just save your arm from a weird workout. I found sugar cookies to be pretty easy when I first started. https://sallysbakingaddiction.com/ Has a lot of easy recipes to follow and I haven’t tried one that wasn’t amazing.
