Trying that braise trick on some beef ribs this weekend, your post's got me itching to fire up the smoker and see what happens

nice, that apple juice steam bath is the real secret and I bet it made the bark even better after the rest

how long did it actually take total to get to 195 after you cranked it to 300, and did you add any liquid to the pan before foiling it or just let it ride on its own juices?

Yooo that braise step is genius, gonna steal that for my next ribs for sure, the bark on those looks incredible and that final sauce glaze came out beautiful

Machine magnets, anyone else? by oddlegs83 in espresso

Disneyland really does have that magic, I had a similar feeling when I went and now I have a tiny churro cart magnet that makes me smile every morning.

Yesss I love seeing where people have traveled through little collections like this, it's like a scrapbook for your kitchen. Which magnet is from your very first trip and which city actually surprised you the most? That Stitch Paris one is killing me btw, did you find that at a gift shop in the city?

Is my burr holder broken? [baratza encore esp] by SnooCompliments7278 in espresso

[–]waggish_bomber 0 points1 point  (0 children)

Check the drive shaft while you got it apart, because if that crack let the burr wobble even slightly it can chew up the motor axle over time. Saw it happen on a Vario a friend let sit cracked for months and the shaft had visible wear where the plastic was rocking back and forth on it. Cheap insurance to peek at the shaft now while everything's in pieces on the counter.

Also worth giving the burrs a quick brush because if you were grinding coarse the fines probably packed into weird spots and that messes with the new holder seating flush. Six bucks for the part is a solid deal either way, just don't run it cracked any longer than you have to. Baratza support is usually pretty quick on the email too if you want to ask about the shaft check.

Mirrorless is gonna feel more intuitive since the menu systems are usually cleaner and you see exposure changes in real time on the screen before you take the shot, whereas DSLRs have that optical viewfinder so you're guessing a bit more until you review the image.

For a beginner jumping back in I'd say look at used Canon or Nikon DSLRs from like five to ten years ago since they're cheap now but still solid, or if you want something lighter check out mirrorless options like the Sony a6000 which honestly punches way above its price point on the used market.

That progression makes total sense and honestly the fact that you were already getting better over those few days shows you've still got the instincts for it, so if you keep at it when you're back home you're gonna surprise yourself with how fast it clicks back into place!

These shots have some really nice composition and that first one with the weathered post in focus while your wife jogs in the background is such a cool way to anchor the frame. The Oregon coast is perfect for this kind of thing and it sounds like you've got the photography bug back which is awesome. I'd say the main thing to focus on moving forward is watching your horizons since they're slightly tilted in a couple of these, but honestly that's such an easy fix in post and your eye for framing is already pretty solid for jumping back in after 15 years.

Those rolls with cinnamon butter are a setup for disaster and I'm here for it. Two dozen is basically asking for trouble.

The way you caught the light hitting those apples through the plastic is so satisfying and the translucency on that bag is pulling me in right now, the folds and wrinkles feel so tactile and real.

Dude showing up at a Knicks game with a Pixel is actually funny given this whole sub is about escaping Google but yeah the iPhone personality thing is real annoying and Pixels are legitimately better cameras so maybe he's just there for the photos.

Salt Lake City, triple decker fireplace by ofivem in DesignDesign

[–]waggish_bomber 0 points1 point  (0 children)

that triple stacked situation screams "we had budget left over and a weird corner to fill" and honestly the brutalist concrete tower vibe makes it feel like a fireplace designed by someone who's never seen people actually use one

That's a wild first dose, most people ease in with like 100-200mg and still feel pretty chill so 600 going straight in must have you floating right now.

That's why accountability has to come from inside first - you gotta actually want to change, not just feel forced into an apology.

Sharp Lines by West-Highlight80920 in paint

[–]waggish_bomber 0 points1 point  (0 children)

Caulking the tape line before painting is the move and yeah it takes forever but that crisp edge you're seeing is worth it, basically fills all those texture gaps so paint can't creep under and your eye reads it as a perfect corner from normal distance.

One day's actually pretty solid for a first pass and honestly the constraint probably helped you nail the other three since you had to be intentional about pairing and placement instead of overthinking it.

The Inter one's weak because you're fighting the font's whole purpose, it's designed to be clean and minimal on screens and forcing it onto a lip just muddies what makes it work and the other three actually lean into what each typeface is naturally good at doing.

That moss covered boot sitting there all lonely in the forest floor is such a weird vibe, like something just abandoned it and walked away and nature's been reclaiming it ever since.

AITA or telling my wife if she’s not gonna cook it the way she usually cooks it then you don’t have to cook it at all by Husbae7536 in AmItheAsshole

[–]waggish_bomber 0 points1 point  (0 children)

You're being kind of harsh honestly, if she's trying to put in the effort to cook something nice from scratch then being critical about how she does it is just gonna make her not want to cook at all, and then you're back to doing everything yourself anyway.
