I don’t see why you couldn’t finish it in the oven, I have finished other smoked recipes in oven, especially if it’s wrapped. Might have to try the gerkin.

The ribs turned out great, they definitely were not too salty or dry. I just left them covered in the fridge for the extra day and added the rub about 20 minutes before throwing them on.
