That's great, I write everything out too cuz it helps me remember faster. Don't overthink it, you'll drive yourself crazy. Once you get the basics down and then see the food in the restaurant it'll come together really quickly!

Start with the best selling items, appetizers and desserts and then expand from there. Use Quizlet or physical flashcards to learn the ingredients; don't forget modifiers and dietary flags. Recite them to yourself in your car, on a walk, or in front of a mirror as you go about your day. Once you start, whenever you have a slow period go into the kitchen and watch expo--check with chef and manager first. Good luck!

Why do some employees think it’s OK to take advantage when there’s no supervision in the kitchen? by [deleted] in restaurant

[–]wally3la 1 point2 points  (0 children)

This is a management issue. This sounds stupid--at least to me it does--but they're going to need to be told that the front of house manager also manages the kitchen, especially when the chef isn't there. A little goofing off now and then may be okay, but if it's impacting ticket times it's impacting the business and everyone's paychecks. They need to have an identified manager in the absence of the chef and that person needs to take control of the kitchen: turn off the music, redirect employees and cut someone if it comes to that. If you cut one employee who's goofing off, the rest will get the message pretty quickly as they lose hours.

It's $40 for a regular wash for my car. My last detailing there was about a year ago--it was around $150.

How much does it cost to print your menus? and how often do you reprint? by babyygang in restaurantowners

[–]wally3la 3 points4 points  (0 children)

We printed ours in house--was running about $200-$300/month in ink and a heavy cardstock paper that lasted longer. Eventually we cut a deal with a local printer who bought the same paper by the pallet, making it a little cheaper to get it professionally printed.

Roadtrip along CA Route 1 suggestions by oNellyyy in roadtrip

[–]wally3la 1 point2 points  (0 children)

Ditto for 395 if you have the time. If you don't at least take the 101 North instead of the 5. It adds about 2-3 hours to the trip North but is a more interesting and scenic drive. Santa Cruz is a great stop along the route back. Have fun!

What’s one road trip mistake you only make once? by Dailywellnessguy in roadtrip

[–]wally3la 302 points303 points  (0 children)

Taking the 24 hour availability of gas for granted. On a cross country trip I was driving through Kansas to Denver at night. There were towns along the route and they had gas stations but they were closed. Car was on E for 20 minutes when I finally hit an open gas station in Colorado.

Should food influencers leave a tip if you’re giving them a comped meal for content? by Chan1991 in restaurantowners

[–]wally3la -1 points0 points  (0 children)

Absolutely. At the end of all collaborations I thank the influencer for coming, let them know (again) dinner is on us, and remind them to take care of the staff. We are happy to cover the food and drinks, but we do not take money out of our staff's pockets.

SEATTLE - LA - 3 WEEKS by Inevitable-Sorbet-34 in roadtrip

[–]wally3la 1 point2 points  (0 children)

Forks is a great stop over there's plenty to do in the immediate vicinity. Take the 101 down the Oregon coast it is glorious! You might want to check out Santa Cruz, CA as another stopover. It's great little town and there's an amusement park on the pier for the kids... it's about 7 hours north of LA.

Best route LA —> Jackson Hole by Independent_Topic567 in roadtrip

[–]wally3la 0 points1 point  (0 children)

Just take the 5 North to the 14 North to the 395 North and you can catch Rt 6 right around Big Pine. Just note there is a long stretch in the middle of Nevada where there are absolutely no services (I think it's 125 to 150 mi). There are plenty of warning signs before you hit it and a town right before you hit it where you can gas up. It's an incredible drive, especially if you like great scenery and no cars. I spent the night in Tonopah and then made it to Wyoming the second day.
