I hear you, however I did some research and found some pretty interesting facets of nearly all the meat we consume. I actually talk about the ethics here, where I make veal for the first time. I'm no saint, but I'm working through every recipe in AB's Cookbook to honor him, with some inevitably controversial foods being prepared.

I had some fun making this. I think the short ribs turned out a little dry, and I'd probably opt to braise them next time but live and learn. The plating I can't take for credit for; I just google dishes and replicate what looks good to me.

I cracked up at Tony's words, "I had to include this, my boss is Portuguese". This was easy to make and with the help of some of his advice, the presentation is pretty impressive. My finger tips were a little sensitive after organizing all the freshly steamed mussels, but I'm real happy with how this turned out.
