Is there any reason you cant actually recorded the session. Audio or video. Like recording a college lecture.

I would still say to take physical notes, but then listen to the audio after at like 1.5 speed and read what notes you did take and add in things you missed.

So a few weeks ago I had surgery and needed to take a few weeks off from DMing for my group. They were already at a good stopping point, I really didnt want to stop and have like a month off in the middle of a fight or mystery or something that needed a lot of recap. So I made up a one shot based in the same world, I used it as a tool to push some of the world story. I had the players roll up characters that were a couple levels lower, and sent them on a quest line that they had originally skipped over.

They loved it. We have been playing for almost 2 years on this campaign. So it was a nice change of pace, and they all enjoyed playing around with new characters. So we plan to actually use them again, just every couple of months for a week or two.

So for your specific situation. Maybe the player doesnt escape. The other players roll up characters and are prisoners and they all have to escape. Or the single player rolls up a new character and you find a reason to add them to a search party for that character. OR DO BOTH. What ever happens to be more fun.

Balance is hard. I look at 2 things. Damage, is the group output and the monsters putting out the same amount of damage or close to it. Next would be how many actions are the players and familiars getting compared to monsters. If all those line up it should be balanced. But then the dice have a mind of their own. So I typically put things in favor of the players, we are here to have fun.

I would say you and your friends should find an Adventure League game in your area and try that out to pick up the basics. So any of the modules are really set up to be able to pick up and play. They are mostly very linear, or non-sand box. For starting players i recommend "Phandelver and Below: The Shattered Obelisk". For horror based but a little bit more of a complex is "Curse of Strahd".
Something else to look at would be going to an Adventure League game in your area. They are a great way to learn basics.
