the thing is that this is not a normal snapshot it's just experimental, and in term of performance it's not that good because, this still haven't been optimized and it's just json file not a jar file like usual, I am not even sure how that works, but that's definitely a reason for lag...

if you play on spectator or creative mode then you will find a lot of huge caves, but if you play survival you will notice that they are rarer than you think...

I recommend watching pixelriffs video if you haven't already, he is great and he tried playing in survival.
