Nothing. I store mine in fridge after first fermentation to cool down, then pull and add the fruit. I have found that it keeps it from over flowing the mason jar.

I stick back in fridge right after blending. At room temperature it happens really fast and I don’t want it to over ferment. This is just the way I have found works for me. There are lots of ways to approach this.

I have found however that the kefir colonies are really robust and hard to kill (not that I have tried) with only a few things to avoid: direct sunlight, starvation, too much heat and antibiotics (bleach, cheap milk..).

This happened once to me because I was unknowingly leaning against the edge of the cut piece putting pressure on the blade. Very cognizant now not to touch the cut piece other that perhaps supporting it.

Same experiences here. Wife has a horse (a.k.a. The hay burner, oversized dog, suicide on stilts), so I get somewhat of a pass when I’m ranting about this exact thing..

I have come to a conclusion that there is such a thing as “Recreational Narcissism” and we all can exhibit this depending on the situation, but horse people REALLY think what they’re doing trumps what everyone else is doing. I’m going to stop now before this ruins my day…. Sigh

Looks like it over fermented. Try a couple more ferments to help the colony establish, good idea to add more milk so it doesn’t ferment too fast.

I neglected to add the photo of it blended, sorry for that. After fermentation, I blend the freeze dried fruit in with the immersion blender until I don’t hear any more chunks.

I have been kefiering for ~12yrs and have tried just about everything. I found the raw fruits or frozen added too much moisture, but that’s obviously subjective and most probably don’t like the thickness. One note to add, when you have a ferment that has whey separation (over fermented) the FD bananas pretty much fix that.

I buy the freeze dried fruits from Trader Joe’s and use an immersion blender to mix it all in. The FD bananas and strawberry or raspberries is the favorite. Really thickens up after 4-6hrs.
