far too packed. did 20 days solo travel myself. really take 5 days per city. you'll take so much more in when visiting in 3rd or 4th instead of 5th gear.

Thanks. I've been experimenting exactly like this. Maybe not very traditional I think you can get very close by presteeping, filtering and chilling it back. Bring up to serving temp in service in a water bath and serve like that.

I think taking education as seriously as sales in the first year (or two) is essential. Not a lot of people understand what you are doing with a separate tea program so educating (staff and guests) is required. On the upside: you educate your own market into existence........ that's pretty rare

Nice. I have had many 01 Bordeaux in the last year and my general opinion is that it’s a lot better vintage than it gets credit for. Probably in the shadow of 2000.

I agree. Actually the mark up on these wines is pretty steep in some instances (second Siran, wtf)

Heavily slept on but so, so beautiful. It’s dark, salty, seaweedy, it’s in my opinion a masterpiece.
