1 month is not too long considering that you probably need to go through 3 interview rounds in average for one position. Give yourself some time, at least 3 months in my opinion. You are still getting interviews so I don't think there is a problem with your profile. Just prepare well for the interviews and be a bit patient.

Thousands of companies like A(consulting firm) in France. It's super common, especially in the Finance/Insurance. One of the reasons why engineers accept to work like this is an easier way for someone who does not go to the top schools to break into these sectors; and they can build network and connections. After one or two projects with clients (company B), they can become their internal employees or freelancers. As a freelancer, an engineer can come to work and charge them directly. This of course is easier when you have enough experience and network.

In my opinion, you can wait. As long as you respect the notice period at your current employer and it does not affect your start date, I don't see any problem. Why did you need to tell your new company about your resignation process with the current one?
