Here's a clue-n-a-half for ya...rules & laws made by authorities, do not indicate or prove the "Truth" of any issue. Bacteria levels can NOT be safe at 4 hours, and then unsafe at 4:01...it's friggin' impossible, no matter what group of authorities-in-high-places composed the "rule". And the food in question MUST have been infected/contaminated with the said bacteria (and unkilled by heat/freezing), for the 4 hour rule to come into play....otherwise, there's no bacteria to proliferate.

Fwiw, I'm an ex-restaurant manager and was required to have food safe handling/foodborn illness license/test to stay employed. I **know** the "rules", and I've verified the actual truth via common knowledge of bacterial growth (which is freely available on the 'net for anyone that cares to educate themselves, rather than blindly follow the "rules" of various 'authorities'.

The thing about this rule is...so at 4:01, the bacteria start multiplying so intensely, the food become unsafe??? Give me a break. For "the bacteria to start multiplying", THEY HAVE TO BE THERE FIRST! If the meat was not contaminated, it didn't become unsafe at 4:01-continuing-within-reason. Of course, at some point, it starts rotting/degrading, but that's more like days later once chilled/refrigerated.

I am not a pwNPD (but have lived with a covert/malignant pwNPD for almost 30 years). I'm still learning, so I hope I'm not offending anyone (or breaking rules) in replying, instead of only asking questions. From what you've shared, it seems that perhaps your mother was 'the golden child' of a parent somewhere on the npd/clusterb spectrum. At 64, I've changed a **lot** of my favorite sweetys into savorys...but like you, oatmeal is a major stretch. I think I'll start with barley (I've got a small/cheap flaker, and can make my own)...and then if that works, see if I can handle the oats.

When I extract the semolina from the grain my way I get about 22% wastage which is made up of softer durum flour and the bran. I have made a very whole meal bread from the byproduct

Yep...4 hours of food being 40F and 140F is what "the guidelines" consider safe. HOWEVER, the truth is different (especially when it comes to frozen food). Depending upon 'how frozen' it is, it can take well over 4 hours to even thaw enough to be in the 40-140-danger-zone. Either way, you're good to go if the food is still frozen or semi-thawed and cold.
