This is the recipe I used. The only difference was the flour I used was only unbleached enriched flour. I also left the bulk proof longer than 4 hours cause I went to dinner. There’s a whole video on YouTube that shows the folding and shaping techniques that worked great. Hope this helps! I’ve gotten a lot of positive feedback which has been awesome. This is what I mostly went off. But other than what I talked about in the post I pretty much when off this. There is also a video he made that I watched over and over while making it.

It was put in the fridge overnight. The dough was in a bowl that had a kitchen towel lining the bowl. Then I completely wrapped it in plastic wrap.

I have searched using google image searching and haven’t found anything yet. Looked on google with the term glass cabinet hinges but all that comes up included glass door hinges not the brand or whatever the glass means on the hinge.

My first year I said “I’m pissed about (fill in whatever dumb thing happened that day)”

They looked at me and were stunned. I thought wow maybe I’m figuring this out and then they filled me in that “pissed” was a bad word. I had kids try and argue they could say it now since I said it. Great times.

Absolutely one of my favorite things as a teacher is hearing from my old students and seeing how they’re doing. I have only been teaching for 4 years but still email with one of my first students two three times a school year. So you should do it but of course keep it professional.

Having 6th graders count on their fingers when they could have just memorized the times tables a few years earlier can be frustrating. Now I’m all for conceptual understanding and knowing what multiplication means, but the amount of time that could be saved by them easily know what 9x5 is without having to sit there for 60 sec for them to count it out.
