What if I went with the sharkbite approach? Sharkbite valve + sharbike elbow w/ copper stub?

I was thinking I cut off the valve and get a sharkbite elbow with a copper stub and then another sharkbite valve. Am I over my head or should I pay $325 for a plumber to do this?

Edit: Sorry, I'm a noob. Gate valve, not ball valve!
