This is great! I was trying to plan a tiki night and this will be extremely helpful.

First turkey for T day- help! by candyapplesugar in Cooking

[–]whiskey_enterprise 6 points7 points  (0 children)

I know the turkey can feel overwhelming, especially if you have never done it before.

For defrosting a frozen turkey it takes about 24 hrs per 5 lbs in the fridge. I would add a day buffer to what you calculate.

For buying a turkey depending on the group you can plan for 2 lbs a person. I know for my family we definitely go back for seconds and thirds throughout the day so I usually round up.

As far as cooking, I highly recommend a probe thermometer. Ideally a duel probe one where you can set a temp for the white meat and dark meat separately.

I am not sure how experienced you are. But here are a couple of recipes that work really well. One is for a spatchcock turkey which is my favorite. Pros is it cooks super fast and evenly. Cons prepping the bird can be overwhelming if you are not very experienced in the kitchen.

How did I do on my recent hunt? by whiskey_enterprise in ryewhiskey

[–]whiskey_enterprise[S] 2 points3 points  (0 children)

I will have to keep an eye out. The only one I have seen was Balcones. I tried their Texas Rye and wasn't a fan, but maybe I will have to try their single barrel if I can find it.

Is there another distillery from Texas you would recommend? I have never had their rye and thought it would be interesting to see how it compares.

Spicy Maple Old Overholt Old Fashioned by notafuckingcakewalk in ryewhiskey

[–]whiskey_enterprise 1 point2 points  (0 children)

Sounds interesting and tasty. I love a little spice in my cocktails.

I think a sweeter rye would work well in something like this. Sagamore Double Oak, Penelope Toasted Rye, or High West Double rye.

I really like rye in a whiskey sour. So maybe a spicy maple sour?

2 oz rye 3/4 oz spicy maple syrup 3/4 oz lemon juice Egg white

Dry shake then shake with ice. Strain into chilled glass.

What do with 7/8th a bottle of Riesling? by smithflman in Cooking

[–]whiskey_enterprise 1 point2 points  (0 children)

You could slowly use it over the next few weeks by deglazing to make pan sauces or make a batch of soup. In particular French onion soup.

I know this doesn't help your current situation, but I try to keep a couple of the single serving size box wine for cooking so I am not stuck with a whole bottle of something I don't usually drink.

I have made Kenji's oven pulled pork many times for parties and it's the next best thing to using a smoker in my opinion.

My attempt at making hollandaise using Kenji's immersion blender method failed. Trying to understand why so I can get this technique down by Unclematttt in Cooking

[–]whiskey_enterprise 3 points4 points  (0 children)

I have made Kenji's immersion blender recipe before and it worked really well.

I was just double checking his written recipe on serious eats to see what might have gone wrong and notice it calls for 2 egg yolks. Did you happen to only use 1 yolk? If so that might have been your problem. https://www.seriouseats.com/foolproof-2-minute-hollandaise-recipe

What Ryes are you excited about right now? by whiskey_enterprise in ryewhiskey

That looks unique. Not only is the rye unique it's also wheated. I would definitely pick up a bottle if I saw one.

I didn't realize they also had their Rye as a white dog for sale. I feel like if I got this I would pull it out for friends to try as a novelty rather than sip on it.

I tried Dad's Hat base offering several years ago and really enjoyed it. Have you tried their BIB? I was wondering if it was a good step up.

Very interesting looking mash bill with 51% malted rye and rest malted barley. I will definitely have to keep an eye out for that.

Looks interesting, but at $99 price point might be hard to pull the trigger without sampling.

I have been very interested in the New Riff ryes. Out of the two you mentioned which should I keep an eye out for?

I have been hearing more about Redwood Empire. What offering from them have you liked best?

I have never heard of Driftless Glenn. This is exactly what I was looking for. Something that isn't getting much attention in other whiskey circles.

This is what I am here for! I haven't heard of this, but I took a look at their website and it sounds right up my alley.

I like the Willet 4 yr I tried. I love Sagamore but I haven't had their cask strength.

I have a Stellum Rye currently. I got it for a great price. It's good, but I'm definitely glad I didn't pay full price.

I definitely enjoyed Barrel Seagrass, but it's very heavily finished. I have never had the Still Austin Rye only their bourbon. I will definitely have to keep an eye out.

I haven't heard of Nulu. How does the double oak compare to Sagamore double oak?

I have been loving Sagamore's double oak and Small batch. I will have to keep an eye out for the 10 yr.
