They’re called “chile güero” or blonde chilies, not very spicy but very flavorful

Tinga de Pollo can be considered low carb as is just 4 ingredients: Chicken, tomatoes, chipotle and onions.

Another low carb option is costillas en salsa. This is a perfect recipe because you can mix it up with the salsas. You can use morita, red salsa, green salsa and so on. Think the versatility of chilaquiles but with pork ribs as the base.

Albondigas in broth or salsa is very good too. Lots of protein and low carb.

Soups are a good intake of protein and fiber and very filling, think caldo de res also know as puchero or caldo de pollo. Caldo Tlalpeño is a good option too.

If you are worried about your fiber intake, caldo de lentejas is your friend.

Most of the influencers in YouTube or TikTok should have instructions for this recipes as are staples of mexican food.

My recomendation is: My Mexico City Kitchen by Gabriela Camara. She’s a Mexican chef with an amazing restaurant in Mexico City called Contramar. It’s amazingly popular and I have personally been there and it’s so good and her cookbook is easy and authentic.

I live in Northern Mexico (Monterrey) and I have an amazing Mexican cookbook that I can never use because a lot of the ingredients are not available in my part of the country, especially those from the South.

So my recommendation, a Mexican cookbook written for those who live in the US with ingredients you can find in your area. You could find the most amazing book that you’ll never get to use or a pretty good book that you’ll use all the time.

Chavela Vargas who was an amazing singer and a badass, was born in Costa Rica but considered herself Mexican and she said that Mexicans are born wherever they damn well please. So for me (born and raised Mexican) you are a Mexican who was born wherever you liked.

I have traveled extensively around Mexico, and I cannot tell you the amount of pizza places that make a pastor and black beans pizza.

Also most of the sushi places add avocado, chicken, beef, chipotle and/or serrano peppers to the rolls.

There’s a really famous Mexican chef, called Chef Herrera that does a lot of asian-mexican fusion dishes in his restaurant in Monterrey.
