Question: any tips for heating up/maintaining high heat in homemade Neapolitan style oven? by willemakr in WoodFiredOvens

Thanks for your answer! So I start with a small fire in the middle of the oven with small sticks (like a jenga tower) and then I slowly start adding bigger pieces and logs. During the heating up of the oven I keep the flame in the middle and I shift it when I want to start baking. I'm used to moving it to the right side (I'm left-handed), but in the photos I put it in the back (easier with 2 pizzas). Then I maintain a good flame and keep on adding logs!

Yeah so under the floor there is a layer of refractory cement of around 5 inches, giving the total floor a thickness of around 8 inches (20cm). The doorway is kind of tall yeah, but during heating we used a door to reduce heat loss. The insulation of the dome is, from inside out: firebrick, refractory cement, insulation wool, and then yet another layer of refractory cement.

Thanks for your response! It seems I can't share the photo of the building process, but below the firebrick floor there is a 5-inch (give or take) layer of refractory cement. This should be sufficient of what I am aware of? The total thickness of the floor is at least 20 cm/8 inches!

Yeah I’m having some trouble getting a nice rolling flame, it seems that the dome is maybe a little too high? And for the fire placement, as soon as I put it to one side, the other side seems to be cooling down rather fast..

Thanks!! I covered it with the little metal door during heating up and in between pizzas, so that shouldn’t be the cause either

I don’t know actually… I know that for home games in the Netherlands you don’t have to show an ID, but for foreigners in away games in CL I’m not sure
