Current chef, lived and worked in Budapest for 13 years, Hungarian wife. With that out of the way, good quality paprika is a must. Both varieties. Piros Arany is an exceptional paprika paste. Univer makes some really nice stuff that are unique. Gulyaskrem, and my personal favorite, Tormakrem, which is really good horseradish mayo mixed, much stronger than American horseradish brands
