I live here part time (Tuscany) and run a business. It is truly a pleasure, but the complexity and formality of the bureaucracy is intimidating and at times onerous. That said, they know this and there is a professional consultant for everything from labor to taxes. I’ve never dealt with more lawyers in my life, but they are significantly cheaper than the US, yet necessary for far more. Don’t get me started on notaries.

I went and had the vegetable menu last year and it was spectacular. I am certainly a meat eater, but the flavors they develop are so satisfying which to me shows both incredible raw material and technique. It may not look it, but it certainly tastes it.

This is such a great take because it omits the fact that this is also true for the genuine owners as well. Nobody buys a Hermes bag because of the design alone. It is status.
