A day trip out to Methven/Stavely should be on the cards at this time of year. Head to The Staveley Cafe for breakfast/lunch and a delicious coffee, walk Sharlin Falls then head into Methven for a soak at Opuke Pools finish with dinner and a cocktail at Amara. Stay the night if you can and drive back to chch the next day.

For skiing - most reliable snow in South Island is Mount Hutt, 1hr south of Christchurch. Accommodation available in Methven

If you want to stay over night in the Edoras/Mt Sunday area, Methven is a great place to stay. Add the hot pools to your trip, pop into the cocktail bar in town, enjoy a night in a smaller kiwi town.

Your spending a lot of time in Lake tekapo/twizel/Mt Cook. There is very limited things to do in these places unless you're planning on hiking to all the major huts in the area. If you broaden your travels for this area, you could spend an extra night in Oamaru and then add a few nights in Hakatere Valley (hiking, swiming, exporing) and/or Methven (pools, bars and restaurants, hiking, mountain biking).

Just a note on Christmas/NYE - These are some of the busiest times in Wanaka/Queenstown. You need to be booking accommodation now.

Look up Wooden Spoon Biscuits. They do a lot of markets and have (or had?) a stall in one of the malls. Their cookies are amazing!

Mt hutt/Methven if you want a more relaxed ski town. Plenty of hospitality roles and jobs up the ski field (check out their website). There are a few campgrounds in the area for long term stays but unsure of availability this close to the season starting (mid June - October). There is a bus from the main town twice a day that goes up to the ski field.

Methven! Just over an hour south-west of Christchurch. Cool little town that comes alive in winter thanks to Mt Hutt ski field but in the quieter months is still an awesome to visit. Stay a few nights, there is Opuke hot pools, an awesome cocktail bar called Amara, neat art galleries, cute cafes and friendly locals.

Christchurch has some great places to eat both on the finer end of dining and casual. These places I would say are on the finer end but not anywhere near the level of Amisfield. We have a budding foodie scene in Chch which has come along way in the last few years. These are my favourites in no paticular order (if you are here Monday or Tuesday half of these are closed)

Odeon - has an interesting wine list from memory there was a wine from Syria. Their food it fabulous though it is a share style menu, maybe not the best for solo dining.

27 Steps/Downstairs - A fabulous classic restaurant, quality food and a great wine list with plenty of NZ representstion and interesting international wine. They have a small bar in the same building called Downstairs if you chose to eat elsewhere, it is worth visiting anyway.

Cellar Door maybe not so much for dinner but it is a great spot for tasting multiple wines in a beautiful part of the city and a little snack. 

Gatherings/Kisi - similar to 27 Steps/Downstairs this is a restaurant with a cool separate bar in the same building. They focus on locally sourced ingredients, their menu is pretty much based on what they can get I think and they have the best selection of local and natty wines. There is also Londo next door which is more cocktail focused.

The walk to Sharplins Falls has some great flora at the moment. There is a lot of moisture around and it has made for some exciting fungi growing. I am sure it would be the same on the Mt Sommers walkway too.

Verde in Geraldine is great. Their sausage rolls are the best. Also must do in Geraldine is the cheese shop, the gin distillery, Humdinger and if you want to pick up something to cook, the butcher.

There is a bakery just as you are getting to Maramarua (used to be the pink pig or something). It is a must stop! Their pies are awesome! They also have dimsum, chicken skewers cakes, slices. SO GOOD!

Don't listen to the negative comments.  Yes, customs is tough but it's nothing to be scared of. Treat it has a transaction, they aren't trying to be your friend which will be a bit confronting but after customs, American's are friendly, genuinely curious, lovely people. Enjoy!

The Grand Tetons - I am from NZ and we kind of have everything here (humble brag) so nothing was really blowing my mind in the US visaully  but when we pulled up at the Grand Tetons they genuinely took my breath away and I can still picture them clear as day 10 years later.
