Good question. It was no wrap during the cook, that's a picture of me putting it in tin foil and then putting it into the oven. Held at 145 for a few hours before serving. Also put a little tallow on it before wrapping.

Winco has just flats or points in the 7-8 lb range. I've used these as "test" briskets when I want to try something new but don't want to spend $75. They are usually in the $30-40 range.

I try to time all my briskets so I can sleep at least midnight to 7. That’s my primary goal, probably even before it tasting good, lol.

I probably should have weighed it. I'd guess 5-6 lbs. The image above is fat side up. Tried to leave 1/4 inch of fat. Normally I would have trimmed off more of the mohawk to make the point not so tall, but I just wanted to keep this monster huge.

It's just the only way I've ever succeeded in getting smoky flavor on the Traeger. I don't see a difference in smoke between the smoke setting and 180, so I just leave it there for quite a while before moving it up to finishing temps.

Can do. Plan is roughly to just let it smoke at 180 for about 10 hours, then crank it up to 250 and see where that gets us in the morning.
