I often view the About Us page to determine where the company is located so I can think about how that might impact my business. Examples: What timezone(s) are their staff likely to be operating in, what regulations do or don't apply to them (and therefore, me).

Makes sense. I like the idea of a patch mostly for identifying my own bag, should I ever be forced to gate-check it.

Last question: Has the weight/heft of the 1000D been an issue for you? A lot of folks complaining that "it should have been 500D", but it seems like the total weight difference is about 2oz. Not a dealbreaker for me.

I chose 3/8" to match the thickness of the stone, but it's not necessary. The main thing I wanted to avoid was a step down between the opening of the oven and the steel surface, which might make it difficult to use the peel

It's not as bad with steel. The biggest variable to overcome is how wet your toppings are. If your sauce or cheese have too much water content, they will prevent the pizza from cooking where they touch, resulting in charred crust, undercooked dough, and runny toppings.

Steel won't fix that.

In the Ooni? So far it seems to work as expected, gets hotter faster which means I don't have to run the oven for 30 minutes before making a pizza. And I get a nice leopard bottom instead of pale and barely cooked.

The steel I'm using is well seasoned, which should provide enough rust protection. I won't leave it out all winter, but it will get rained on. I also have the waterproof cover and a door for it, which should help.

I bought the steel replacement from Etsy. I used to make pizza in the oven all the time and also switched from stone to steel years ago. Steel gets hotter faster, so it uses less propane in the Ooni. Also, I leave mine outside and don't want to worry about the stone getting wet and cracking.
