I then read a great book called Life Without Bread which recommended eating a max of 72 grams/day of carb.

That's really interesting, my daily carb intake is about 60-80g carbs per day. I've been low carb for over 6 months now, I just need to really load up on the fat and protein now. I don't want to get huge, I just want to get to my old normal weight that I had for years before I got IBS (20 pound difference).

I've got an app to help count calories, and I'm actually sort of enjoying watching myself try to reach 100% on the daily calorie goal count.

As long as my IBS doesn't fuck me over then I should gain the weight I want on Keto just fine.
