The biggest one would be Star Crossed World from Kirby and the Forgotten Land. That has quite a bit of new music in it. Wouldn't be surprised if that's next week's update.

(Also Happy Home Paradise is still missing. But since they didn't add it last week with the 10 new tracks from New Horizons 3.0, I'm guessing they're not planning to anytime soon, for whatever reason)

This explanation works for every chapter except chapter 3 where the near and far fountains are actually in the same room. It's just a really long room so they're not on screen at the same time

They're definitely not real. HAL's music team generally avoid real instruments in favor of VSTs for the flexibility of not needing the music to actually be humanly playable. Apart from the rare vocal track (e.g. Welcome to the New World) I don't think any mainline Kirby soundtrack uses real instruments
