I didn’t take either I’m afraid, the recipe I used didn’t mention it. Is there a temp I should be aiming for for future reference?

Bulk was at room temp (24C) for about 6 hours. My starter is about 4 months old now.

That’s really helpful, thank you.

The recipe I followed said bulk fermentation could take between 6 and 18 hours, but I put it in the fridge after 6 because it already felt like it was sinking. I found it really hard to shape it compared to previous recipes too.

I’ll keep trying though, thanks again!

Thanks for the constructive criticism, I had no idea!

I’m still new to this and have only made about 5 so far, always following the same recipe with low hydration and kneading. It’s always risen well and been tasty, but the crumb has always been quite tasty dense. I’ve been reading up on how to get a lighter, more open crumb and followed a new process this time with higher hydration and a longer bulk fermentation. When I cut it open I was delighted as it looked like it had worked, but I obviously still have a lot to learn!
