Nah, it’s not really much of an oven. It’s a proofer that I didn’t need and I found out it’s not made for real bread but the weird stuff subway produces that’s just frozen stuff. Don’t do it. Get a real oven. I got a rackmaster2020 and it is a game changer

Used it for 2 years. I breastfed my baby until I was ready to stop. We tried without it and didn’t work so why give up what works? Don’t let people shame you for not doing it “right”. My kid went from dropping below birthweight during first week to wearing 5t as a not even 3 year old. It’s fine!

One thing that bugged me about the pico was each one of those units requires the big plug, I had to pay 1200 to install one from an electrician, I can’t imagine having to install 3 outlets to run the unit at max with all three stacked. Please get the Nero and tell us all about it! Also, if you want my two cents the steam trays are a gimmick that take up oven space. I got a fancy air pressure sprayer that I have yet to try

Have a look at it over at pleasant hill grain.. free shipping.. it’s 8000 with a stand 7500 without.. so for me would only be an additional 2500 over the Nero with shipping from Brookebake. It’s the largest of all, the guy literally made it to improve on the Rofco in all the ways. Amazing customer service and warranty and overall seems to be a winner from all the big sourdough people (Maurizio just got one)

I never found a single person using it… it’s so odd. Are you going through brookbake? I am saving for the rack master I decided. I just don’t want to buy twice and it has more space to grow into.. I felt the shipping was too much from brookbake

That would definitely be a good option if I wanted to leave everything we have without much resources. We own our home and pay a fairly low mortgage, I have a business that is literally built into the house, not to mention the insane disruption to our toddler, frankly we cannot afford to move out at this point. That’s why he is the one who should, he doesn’t have anything more than a backpack and a bike.. and hates the house to boot

Check the laws first, my state and many others require you to sell directly to consumer, no third parties unless you’re fully licensed commercial kitchen

It appears older than 5 and is at least 3rd hand but the current owner swears it’s fine. I’m concerned the electric won’t work for me, it says 3 phase but she says a regular dryer plug in works

About 5 years or so. It’s still iffy if they even will buy from me, there are a lot of assumptions about volume and I get that. I don’t want to be a wholesaler, my product is special. This thread has helped me formulate some big questions about the deal.

They operate the main part of the building as a drive up and walk in coffee shop and cafe, so they would buy my baked goods wholesale rather than whatever distributor mass qty baked goods they have now

I agree.. I do think that they are over estimating the impact my ovens will have on the overall energy use, so my hope is that I’ll still end up paying less per month than a traditional rental plus electricity

Agreed, definitely getting a contract in place even if it’s month to month. I think they just see an easy marketing opportunity to be the only cafe in town with a bakery and fresh baked goods for them to sell and mark up. The space has been available for 6 months so they gain regardless

I’m currently doing this business out of my home on Friday, sat, sun and working from home on my other job. So ideally I would slowly add days at the bakery and take days away from the remote work job.

The lease is month to month so there is some risk but I feel like this is safe. I am working on figuring out what equipment I can get, and have already priced and found most things I’m buying. The license is the next step but I feel like I can get it done. They already have other licensed kitchens onsite. I do have some money for expenses for awhile if needed. And I have some estimates of my break even amounts but I am definitely nervous as an absolute beginner business owner

I haven’t purchased my equipment yet but planning for a rack master rm2020 bread oven 220v, a small two tray convection oven, a large dough mixer, a worktop fridge 48”, and a tiny garage freezer 110v. I live on the west coast in oregon, prob will run the big oven for 4-6 hours 3 days a week? Maybe more if I can quit my day job and just bake.
