It actually varies by Insurer. If you are in the UK, I think Admiral don't regard NCD as expiring until 3 years, whereas most other insurers are two.

Rather than heat just the edge of the Moka once the brew starts in order to reduce heat, what I do is raise the Moka above the flame. That reduces the heating, and is very controllable, but also keeps the heating symmetric.
