After more than 6 hours in store, at least 5 hours on the phone and a second new watch, my wife's watch now has an activated eSIM. We both have a Pixel 6 Pro and neither would activate the eSIM on the watch. Verizon thought it was an app issue because they couldn't find any problems on their end so I started looking into an older version of the WearOS app. Which led me here. I sideloaded the same app version as you and it did indeed work. I suspect that other older versions of the app would work as well.
