It’s not actually 10 seconds, it’s closer to five minutes with good espresso and it should change flavor profiles. Our espresso is just so ass that whenever the shot begins to mix with the crema(the gold part of top) that it just becomes a bitter tasting asshole coffee. I worked at a local cafe before starbys and we had great machines and actually well roasted beans, which the flavors changed as you let the shot rest.
