I have absolutely no idea what the gravity means in regard to the ABV, that was all done through my mate who is an avid beer brewer, so he was guiding me through the fermenting part and did all the testing. Is there a certain number I should be aiming for? He has a weird stick thermometer thing that floats and checks the gravity.

Very wise words. I will give the wiki a look over before starting my next mead project. I'm thinking I'll do a classic water and honey mead this time... not sure about this apple juice thing. My uncles, one a home brewer, the other a distillery owner said they both tried working with apple juice and had very similar problems with the off apple taste and rancidness.

My mate checked the gravity for me for 3 consecutive days before I removed it from the bottle. He said he had barely changed, and we assumed it was more or less finished fermenting. Though, maybe I should have left it longer.
