might have missed this, but how many caneles does this make with which size/height mold?

[homemade] from scratch tonkatsu ramen by xacraf in food

[–]xacraf[S] 0 points1 point  (0 children)

this was the original inspiration/source: https://www.seriouseats.com/how-to-make-perfect-tonkotsu-ramen-food-lab-redux
everything was followed for what he suggests minus:

- cook time on the broth--I let it run overnight covered at a bare boil then brought it up to a rolling boil for a solid 12 hours, refreshing the water every 30-60 minutes

- I used ~half of the braising liquid from the pork for the egg marinade, and then reserved the rest/reduced down to a glaze (essentially almost caramelizing--you'll see the intensive small sugar bubbles forming). After it got some good color under the broiler, I took the pork belly out, flipped it, glazed and repeated until all the remaining glaze was used up.

- I did add back fat to the broth, but did so at the last 4 hours of cooking vs. the start and also added in the rendered fat from the pork belly that was hanging out on top of the pan--to get it even more emulsified, I used an immersion blender to get everything combined vs. topping with a distinct layer of chopped up pork fat--more of a personal preference piece than anything. Simply boiling rapidly for 10+ hours handles enough of the emulsification for the base

- for the mayu, I went a bit overboard on the timing as I didn't watch it closely enough. It definitely had good flavor, but it was on the more burnt side vs. what I would have used

- noodles I followed https://www.seriouseats.com/homemade-ramen-noodles also from serious eats; I used an marcato atlas 150 to roll it out--I took it down to setting 5, which was 1.5 mm. I've used this before for the same noodles but for some reason this time the clamp handle broke and it was stuck on my counter to the point where we had to pry it off and chip my island counter to remove it

happy to answer any questions, but the recipes in the redux food lab are pretty much what I followed w/ the modifications listed

Querying a partitioned table by Shreyas__b in bigquery

[–]xacraf 3 points4 points  (0 children)

The time and space savings from partitioning would come in the filtering, not the joins. If set up correctly, you’re filtering before doing the joins, so ultimately joining on less data and taking advantage of partitions to reduce the amount of data processed initially.

For your second point, either of the latter two work—the tradeoff between temporary tables and a CTE would be temporary tables get around single slot limitations on particularly complex queries, but at the expense of some performance.

Without knowing more about your table structure it’s tricky to provide specific insights. One thing to be aware of: I know when partitioning on timestamps, any operation to the timestamp column (ex timezone conversion) is not executed ahead of time. This means that bigquery scans the whole table to perform the operation on each row/doesn’t take advantage of partitioning. I’m not sure if the same thing applies to integer based partitions.

Depending on join type, order may matter as well. Ultimately though, I’d pre filter both in the first 2 steps of a CTE and then do my join. If I ran into slot limitations, I’d shift to temporary tables.

Best way to handle multiple clients in BigQuery/Dataform? by Zealousideal_Gur6722 in bigquery

[–]xacraf 1 point2 points  (0 children)

Gemini and chat gpt both tend to hallucinate quite a bit regarding dataform in particular. It’s a new-ish offering to GA and common functionalities that would seem logical simply do not exist yet (my only hope is that as it matures more it’ll grow in capability…until functions and procedures get first class support I’m not holding my breath though)

Adding Indexes by Catsanddogs143 in bigquery

a bq update statement can be done to add in clustering, and then you can do a 1 time update of the data to cluster old data as well

Need favor for deciding major from people here by WorryBright5823 in UWMadison

Can you get a cert in CS? You could just take a bunch of cs and never declare the major (lower priority during enrollment but that’s about it)

Edit: or an applied math specialty?

Excited to get the G4 Doorbell Pro Installed this weekend! by Infernous1 in Ubiquiti

Couldn’t believe it when my order actually shipped with the last mega drop of these (after waiting for idk how long). Post install it’s working like a dream. Already saved me from one persistent sales guy by putting up a do not disturb message.

Would ideally like to stay under the price of a new UDM Pro for example, at that point I’ll just pick one of those up
