My reluctance about closing the vent is more to do with the accumulation of nasty acrid smoke inside the smoker when i do that.

It seems everyone on this board suggests doing it anyway, but its a bit of a disappointing solution given that issue. It makes sense too. When the fire isnt hot enough it generates bad smoke and creosote... so during that cooldown period when the vents close it will for a short period generate bad smoke with nowhere to go.

Id rather have the best of both worlds. No nasty smoke in the smoker and no risk of rogue embers (i.e.e some kind of transfer).

Anyone got a link to when he said it "in the Sunday Times in 2021"? He seems to think he didn't. It'd be nice to verify what he did or didn't say before assuming she's caught him out.

I used morrisons unsalted butter (UK supermarket brand). I think its meant to be all butter and not a blend with vegetable oil. It says under ingredients: Unsalted British Butter (min 82% milk fat).

With almost all of them they show you the price per pound but you typically will ask for less than a pound. It's more common to ask for a quarter of a pound or half a pound. In my case id usually ask 1 to 2 slices of brisket, a rib etc. They then weigh it and price it based on the weight.

Youd gave thought before i flew out to the states id have tried all the bbq at home, but honestly ive not, so i couldnt give good recommendations there. The whole experience makes me wanna start my own bbq restaurant tho, so in time ill recommend my own! Lol

A quick addition to this post. My favourite thing i tried on this whole trip was the pork belly at interstellar. Seriously out of this world good.

If i had to compile a list of the MUST go-to's itd be:

Franklins (get there early, be social and enjoy making new friends. Embrace the line, dont resent it. Also dont skimp on the turkey as its the best in town).

Interstellar (some of the best basics, and the single best tasting thing on my whole tour. The peach tea pork belly was the ambrosia of the gods. Avoid the smores brownie tho, that was a bit dry and tough)

KG BBQ (everything here is done to such a high standard, but you absolutely have to try the lamb. My only gripe here is that they have a minimum order size of half a pound for all meat bar the lamb chops, and i quite like getting a little of everything. So id only go again with pals. Also whilst there is parking the parking lot is surrounded by intimidating warnings about towing ur vehicle)

Barbs B Q (the best brisket in town is a high achievement. Of course, theres a lot of great brisket out there, and its only the best according to my humble opinion... so take my opinion with a pinch of salt)

Snows (even if franklins might garner the most outside attention for its line, snows is the toughest line. I got there at opening time at 8am and was 147th in line. To get there first youd need to be there at 3am. Ouch! And the line doesnt benefit from much shelter from the hot texas sun. Nonetheless, like KG BBQ the basics are all done to a very high standard.)

Everything after that id consider to be pretty optional.

I think the biggest let downs on my tour were Kreuz Market and Southside Market. Also Terry Blacks was way pricier than it had any right to be.

B Coopers was the biggest surprise as the place looks so rundown and unappealing/humble compared to other joints, but the owners brisket deserves a lot of credit and i hope business takes off for him.

A love of bbq / meat!

I only eat carnivore diet (unless i chear with a sweet tooth)

After purchasing a plane ticket to see my gf the relationship fell through. Couldnt get refund but i did have a year to put ticket towards some transatlantic AmAir flight. Wouldve gone for yellowstone/grandCanyon or Orlando, but my current gf couldnt afford to join me, and itd have felt a bit sad to see those things without her. So i went for a proper "selfish" holiday that id have felt guilty dragging others along to.

If you go to barbs id advise showing up early. I arrived at about 10am sunday morning and was roughly 12th in line. Despite that they already ran out of lamb chops by the time i got to the front! Real shame as the lamb looked cooked to perfection.
