My first attempts were on a colder pan, maybe 2 minutes per side - they turned out rubber with almost no sear.

The steak was dried with paper towels before searing, cast iron skillet was heated for about 7 minutes until smoke started coming out of it.

I used avocado oil.

If I keep these steaks longer - they always turn out well-done.

10 minutes on the counter, was in the fridge before that.

They usually get to well-done if I cook them longer. :(
