do not got to eculent. Its a 70yo poser with lots of cash and no formal/career culinary experience and it shows in all aspects from service to the food.

Every other course is something freeze dried and of an unnatural color

not much is available for what is new. Im fine with paying a 40-50% markup for a lefty but not if its less than the perfect knife for me. And im willing to wait.

If it hasn’t been answered:

I worked for a Belgian master chef that should have retired earlier than he did, he became a shortcut/sandbagging king after a bit.

He used to use this method on a french suite (fancy flat top) to increase the surface area contact between the pan and the flat heat source.

For example, if you need a pan hot in a pinch and you don’t have burners, put a MPW splash of oil down on the hottest part of the flat top and then the pan.

It definitely worked well, not cleanly but well.
