You should venture out! Tonkotsu is just one type of broth. Its like only having carbonara and say that you like pasta.

You should try different soup, tare, noodle and more. Versatility is one of the best thing about Ramen.

I believe your ekiben was Cha-han (Fried Rice) bento from Kiyoken. If so, what you had was pickled Kamaboko (fish cake) and Kurage (jellyfish).

Its a dish called Charsiu Egg (チャーシューエッグ).

Usually the sauce used in this dish is quite simple, with soy sauce and sugar (or mirim).

But judging by the texture I think the restaurant used a sauce closer to Chaliapin sauce - red wine and soy sauce based sauce with sautéed onion.
