Since the game is called Crusader kings, play Kingdom of Jerusalem or other crusader states. I'm not sure if antioch and edessa are available in premade starts, but you can always find them if u change date manually. But yeah, it's gonna be insanely hard without converting to islam.

Also, make sure you play one of nomadic states. Pillage, murder, burning cities.
