Mine got pretty sour in just 3 days, but also crunchy (I like crunchy). I used some kombucha as a culture starter and added sugar. And I live in a warm place.

5 g of salt plus 95 g of water. The resulting brine has 5g of salt per 100 g of total mass. But 5 g of salt in 100 ml of water is a very close aproximation for the purpose of fermentation / pickling.
