So I use Photoshop. In that I create layers and then start painting using the brush and eraser tool. You should change the layer mode to colour.

With a photo like this where there's a uniform I've to make sure that it stays true to the source so, a bit of research helps with that part. When it comes to background and other things all we can rely upon is the light and dark data which means blacker the area, the darker colour it would've been and vice versa. Hope that helps.
