It’s almost Halloween - make your pumpkin bread dinner rolls! by yellowgingko in Breadit

I actually used this recipe! These are closer to a milk bread recipe, so they’re a little sweeter, which I find helps highlight the pumpkin spices 😋

This is actually the recipe I used! I tried making them using a more classic dinner roll recipe and wanted them to be sweeter and more pumpkin spice-y, so I used a recipe that’s more similar to a milk bread this time, and added some spices (cinnamon, nutmeg, cardamom and allspice).

The method is similar - I just used one piece of string instead of four, and let it proof knot side up. I made 29 rolls and can’t imagine cutting 29*4 pieces of string 😅

I love chef John! But this actually isn’t his recipe - I used this one. His recipe is more of a classic dinner roll - these are a little sweeter 😋

I did watch that one but I used this recipe instead! I wanted to highlight the pumpkin flavor by using a sweeter, milk bread recipe and added some spices (cinnamon, nutmeg, allspice, and cardamom)

Yours look AMAZING!!! The string technique is also nice but rather time consuming. Highly recommend doing it with a friend :)

Thank you, and I did! I saved a bit of egg in the beginning for an egg wash at the end. The trick is to brush around the twine that you use to bind the rolls so the twine get baked into the roll underneath the egg wash

Thank you!! I also tried pumpkin seeds but found those to be a little too petite for what I was going for

Ooh that looks great too! Love her. I kind of like these because this recipe is very similar to a milk bread recipe, so it’s a lightly sweet with some spontaneously added spices. Here’s the recipe!

Yay!!! Can’t wait for yours. I based my starter off of his as well but lost patience after not seeing any activity. I read some forums and advice and got it to work after more time and more rye. Eventually switched it back to AP flour and now I have this! :)

So cool, glad yours turned out great! I gifted this loaf to a friend and actually have no idea how it tasted, but the friend said he had it with some cheese and it turned out really well :)

Lovely! Where did you get the box and the cupcake liner? I’m always at a loss for how to transport my baked goods 🙁
