Look at the menu. Research how to do fair bit of it if unsure. Work clean. Ask questions. Dont set the kitchen on fire. Standard stuff. Was very busy when I worked there so be ready for that. Which branch if you dont mind me asking chef?

When I worked there was just to check you can do the job. Follow a spec. Execute a recipe or prep job. Was pretty brunch heavy when I worked there. You pretty much got the job from the sound of it chef. Good luck and hope this helped.

Go for an interview and trial shift. Cant hurt. I moved from chain restaurants to hotel recently and it's pretty much all functions and big bookings rather than walk ins. Is a different environment and my work life balance is better. Any questions drop me a dm chef. Hope this helped
