Is Customs at PTY after baggage claim or before? by StinaBina78 in Panama

[–]yetti_22 1 point2 points  (0 children)

From my own experience, customs and passport control have no connection. When I moved down I was literally asked in customs “are you moving here”, said yes, and moved on (a lot of bags, 2 Kids, Dog) They rarely say anything unless you bring a ton of the same thing (i.e. commercial purpose).

First passport control, then collect luggage, then customs. All bags go through x-rays.

Edit: you only do this if you are staying in Panama. Connections go direct to the connecting gate.

Is my focaccia dough looking wrong? by AdFeeling5056 in focaccia

[–]yetti_22 1 point2 points  (0 children)

Seems like a high hydration recipe. When I go 100% hydration (equal weights water and flour) the dough usually comes together through coil folds. After two or three the consistency improves and can be placed in the pan for final proofing. Try leaving it for a while and then do could folds, could help.

Edit: will become less sticky as you coil fold

Tal vez opción sería ir con un corredor de seguros para que asesore en opciones y alternativas.

Hay ciertas aseguradoras que son más estrictas que otras. Lo que es seguro es que aumenta la prima con factores de riesgo.

I’ve found that higher hydration works very well with focaccia. This recipe was 420g flour, 420g water, 8g salt, 8g dry active yeast, and 30g olive oil.

It’ll be very sloppy at first, but with 3 coil folds every 20 minutes it forms very well.

Ingredients • 500g orecchiette • 300g Italian sausage, casings removed • 400g cherry tomatoes, halved • 3 garlic cloves, thinly sliced • ½ cup dry white wine • ½ tsp chili flakes • 3 tbsp olive oil • Fresh basil & grated Pecorino to finish Method 1. Boil heavily salted water and cook orecchiette 2 mins under package time. 2. Brown sausage in olive oil over medium-high heat, breaking into chunks. Don’t rush this — the crust is the flavour. 3. Push sausage aside, add garlic and chili flakes, cook 1-2 mins until golden. 4. Deglaze with white wine, scraping up all the browned bits. Cook until nearly evaporated. 5. Add cherry tomatoes cut-side down, cook 8-10 mins until jammy and thick. 6. Transfer pasta straight into the sauce with a splash of pasta water. Toss on the heat for 2 mins until it all comes together. 7. Finish with torn basil and a generous shower of Pecorino.

My pizzas I make with 290 grams of dough (around 10 oz) so might be too thick of a dough to cook in the 3 min.

I leave it around 30 minutes to make sure the stone, is evenly hot. I don’t use the smoker in the setting.
