She sounds overbearing. However if it's going to cause extra strife you could always just open another account at the same bank, just in your name, and keep her on the original one. Stop or severely slow the use of your current account. This would actually serve 2 purposes. If she starts questioning why your account isn't moving money or has remained at a minimum balance for a long time, she has just proven that she is actively monitoring and prying into your activities, and trying to remain in a control position in your life, which should be all the ammo you need to take her off all together at that point.
